Picadillo is a dish originating from Latin America. It is primarily made from ground beef, tomatoes, olives, and seasoning. There are many variations of this dish however I keep my very simple and straight forward and it is still packed with flavor. Plus the aroma this dish produces is just *heavenly*. This recipe was taken from one of my favorite go-to recipe sites: skinnytaste.com. My version posted with adaptations below.

Yields: 4 generous servings
Ingredients
1 lb ground beef (or ground turkey for lower fat version)
1/2 large chopped onion
2 cloves garlic, minced
1 tomato chopped
1 tsp salt
Garlic powder (to taste)
1/2 red bell pepper chopped
4 oz tomato sauce (low sodium option)
1 tsp cumin
1 - 2 bay leaves
2 tbsp green olives halved + 2 tbsp olive brine
Gadgets: Instant Pot, Food Processor (recommended for easy chopping/mincing)
Instant Pot Picadillo Recipe
Press sautè button on instant pot, when hot brown your meat and season with salt, pepper, and garlic powder. Use a wooden spoon to break up the meat into small chunks until no longer pink.
Add onion, garlic, tomato, pepper and stir for 1 minute. Add olives + olive brine, cumin, and bay leaf. Add in tomato sauce, 3 tbsp of water and mix thoroughly. Cover and cook at high pressure for 15 minutes. Use natural or quick release.
Enjoy your picadillo over rice or cauliflower rice (for a low carb option)!
