Instant Pot Vortex Air Fryer Eggplant Parmesan


For my fiancé's birthday this year I got him the Instant Pot Air Fryer, found here. We are big fans of the instant pot so decided to choose their Air Fryer due to how user friendly it is and the size. So far it has lived up to (and exceeded) our expectations!


Eggplant parmesan is one of our favorite meals and it has been on my cooking bucket list. I'm happy to say I finally got to cross this one off. It was much easier than I thought it was going to be. Another fun part about this meal is that we were able to get most of the ingredients from a local independent fresh market really close to our home. If you ever find yourself in the Indian Rocks Beach area, take the time to visit the Indian Rocks Fresh Market. They are open daily 8:30AM - 6:30PM and have the most beautiful produce. Seriously, some of the eggplants were the size of my head! #Scrumptious

Ingredients:

  • 1 cup seasoned Italian breadcrumbs

  • 1/4 cup flour

  • 2 eggs, beaten

  • 1 medium eggplant, sliced into 1/2 in discs

  • 1 cup marinara sauce

  • 1 1/2 cups shredded mozzarella

Recipe:

  1. Place flour in a shallow bowl. Place beaten eggs in a second shallow bowl. In a third bowl add the breadcrumbs.

  2. Dip sliced eggplant in flour, then in eggs, and lastly coat with breadcrumb. Be sure to coat both sides and edges of the eggplant. Place eggplant on to a plate or baking sheet (you will need later) for 5 minutes before placing in air fryer.

  3. Preheat air fryer to 370 degrees.

  4. Place breaded eggplant rounds in air fryer basket and make sure they do not touch. (You may have to work in batches depending on size of the eggplant and air fryer.) Cook for 8 - 10 minutes on one side, then flip and cook for another 4 - 6 minutes until desired crispiness is achieved.

  5. Place air fried eggplant rounds on baking sheet as they are fried. Top each round with marinara and shredded mozzarella.

  6. Place prepared eggplant rounds in the oven on a high broil for 3 - 5 minutes until the cheese is brown and bubbling.

  7. Serve with a size of prepared zucchini noodles topped with the extra marinara. Top with grated parmesan and ENJOY!
