Instant Pot Vortex Air Fryer Coconut Shrimp

One of my favorite things to order at seafood restaurants is coconut shrimp so I wanted to try making it at home with our new Instant Pot Vortex Air Fryer. Anything you traditionally deep fry, can be made without oil in an air fryer which is why I’m deeming this a “healthy” version of one of my favorite dishes. The flavors of this dish are unreal and stands up to the seafood restaurant staple.

Monica's Test Kitchen Tip: Use the LARGEST shrimp possible for this recipe to get a proper balance of your shrimp to coconut flavor ratio.


Ingredients:

1 lb x-large or large shrimp peeled and deveined

2 eggs beaten

1/2 cup all purpose flour

1/2 cup sweetened shredded coconut

1/4 cup panko breadcrumbs

1 tsp salt

1/4 tsp black pepper

cooking oil for spraying

1 tbsp sweet thai chili sauce

1 tsp mayo


Recipe:

  1. Pat shrimp dry with a paper towel to absorb excess moisture. This step is important because too much moisture on the shrimp can cause it to steam and not get crispy.

  2. Grab 3 small - medium sized bowls. Place flour in one bowl. Place beaten eggs in one bowl. Combine coconut, breadcrumbs, salt, and pepper in another bowl.

  3. Preheat air fryer to 360 degrees and spray basket with cooking spray.

  4. Dip each shrimp in flour, egg, then coconut mixture (on both sides). Ensure shrimp are completely covered with coconut mixture. Repeat with all shrimp and set aside until all are covered with coconut mixture.

  5. Place shrimp in single layer in air fryer basket. (If all do not fit in one batch you may have to air fry a second batch.)

  6. Cook for 10 - 12 minutes (turning halfway through if desired)

  7. While shrimp is air frying prepare your sweet thai chili sauce by mixing mayo with a store bought sweet thai chili sauce. (I purchased this from my local grocer.) The reason I mix mayo here is to take off some of the heat from the sauce but to keep it lower calorie you can leave the sauce as is.

  8. Remove shrimp from basket onto a plate and cover with foil to keep warm while air frying second batch (if applicable.)

  9. Serve with a side of your choice (pictured here is black beans and brown rice) and ENJOY!🥥🍤😋
